This week's recipe is so easy, and so yummy! I put this pesto on my morning toast, eggs, I even mixed it with some penne pasta, and my 15 month old devoured it. He LOVED it to say the least.
The only downside to this is you need to eat it right away, because it does have avocado in it, and will turn brown.
This makes one cup of Pesto, I make small batches because of the problem above.
1. 1 Avocado
2. 1 Clove of Garlic
3. Salt (to taste)
4. 1 Cup of Basil
So you could go one of two ways, Ive tried both and both work great.
1. If you have a food processor, put your avocado, basil, and garlic and blend. Add salt to taste.
2. If no processor, smash your avocado with a fork on a cutting board. Put your garlic through a garlic crusher, and cut up your basil fine. Put it all in a bowl, mix it and add salt to taste.
Super easy super yummy! And add to any food you like.
