So who loves pesto?! Ummm EVERYONE!!
So I've been on a pesto obsession lately, and just got a food processor so why not make a "skinny" pesto for the perfect meal prep?!
4 Cloves of Garlic
2 Bunches of Basil
1/2 Cup of Pine Nuts
Pinch of Salt
4 tbsp of Extra Virgin Olive Oil
(Usually pesto put parmesan cheese and regular olive oil, making it good but fatty). This is a tasty low calorie pesto.
Put this all in a food processor, or if you don't have one you could improvise with a blender. Might not get as fine, but it'll still make your chicken tasty.
Before lathering your chicken breast up, put salt on the chicken and then lather those babies up. And put it in the oven for 30-40 min on 350 degrees.
I paired my pesto chicken with oven roasted garlic, olive oil, salted orange cauliflower, and gold beets. Sooooooo Good. And put it all in a pan together and the veggies soaked up the yummy chicken flavor also!
